Fig Jam
This is a healthier version of jam using Xylitol. Xylitol is a naturally occurring alcohol found in most plant material, and has 40% less calories than sugar. You can find Xylitol from health food shops.
How does it work?Xylitol tastes sweet but, unlike sugar, it is not converted in the mouth to acids that cause tooth decay. It reduces levels of decay-causing bacteria in saliva.
Not for animal consumption.
Prep time - 20 minutes
Cook time - roughly 1hr
Ingredients:
1kg of brown or black mission turkey figs, stemmed and quartered.
11/2 cups of Xylitol
Juice of 11/2 lemons
1 teaspoon of pure vanilla extract
Method:
Place all the ingredients except the vanilla extract in a large pan and heat over medium- high heat, stirring to combine as the sugar melts.
Bring to boil the reduce heat to medium and cook until thickened, about 60 minutes. Stir often to prevent any sticking to the bottom of the pan. Remove from heat, stir in the vanilla extract and cool completely.
Store in jam jars or any other air tight jar and place in fridge. Lasts for ages and tastes fantastic !
